I was actually looking for a pancake recipe as we just had shrove tuesday here in the UK [ I missed it ] , I think I will cook these for my daughter instead. I wonder if the granulated suger were to be replaced by brown suger would the cookies appear more rustic, if you think about it in days gone by the refined sugar would not have been available. Also mybe a bed of jam/syrub could be added, thanks for posting this..
